  The market is already established. Advertising through local health food stores, connecting with online health, organics, gardening, vegetarian and "greenlife" forums, alternative health care providers (accupuncturists, chiropractors, homeopaths, naturopaths, etc.) Most of us are just waiting for someone to create a GREAT healthy fast food chain.

  Having experience in the restaurant business has given me special insight on this subject. The truth is that a start-up restaurant is very hard to do. The costs are huge and the income is limited. However; if you have a great concept and an exceptional, not-expensive menu...you will gain business through word-of-mouth until you can afford to advertise. The real trick is to have a VERY TIGHT budget in the beginning. don't make the mistake of borrowing a lot of money to get started. Start small, hire the right people, and offer a great menu and before long you will have the funds needed to expand.

  Establishing a chain or franchise model is traditionally based on a successful restaurant that exists. Financiers and VC organizations look for historical financial performance coupled with a viable and sound market that the business serves. Taking it from idea to chain starts with the market research and business plan. Then open your first location. Run it for 1-2 years before thinking franchise. This method is proven to work. In most cases, other restaurantiers waited 5-10 years but if your idea sells, it just plain sells.
