Idea Description
I want to open a bakery that makes fresh baked goods that are free from common food allergens, most importantly wheat and dairy. More and more people are being diagnosed with serious food allergies and there is limited choice for them in the foods they can eat. My fiance (who has celiac disease) and I have a lot of trouble finding breads and cookies that taste good and don't crumble when we try to eat them. I want to offer people bakery treats that are just as tasty, just as fresh, and just as nutritious (not just full of starches) as traditional bakery items. I think I would also do special orders for those who are allergic to eggs and soy products...and I wouldn't use any nuts.
What will you do if you win $10,000 for this idea?
I'm still prefecting the recipes I want to use, so up to $500 of it would go towards ingredients to keep trying out new things. The rest would go towards my start up costs, most likely equipment.

Q1: Should I designate separate space (avoiding cross contamination) and make traditional wheat-full items or stick to only gluten free things? I've read some about autistic children being put on gluten free diets...Are there any other dietary specifications for those children?
i am lactose and this idea sounds great.
