Nice idea - Challenge would be to stay 'focused' on a particular diet (difficult to manage & be profitable w/ different diets - make wide-variety of foods). Think of your customers and market volume; have heard of some of these in NYC; as part of bus plan determine your target (high vs low end customers) and location (need enough market)...do you want it to be a restaurant or a 'takeout' service w/ pre-packaged lunches in city or high-end restaurant; also diets aren't 1 meal - they are all day long - can you partner w/ diet services in the area.
That's a great idea and one that definately needs to be developed. My wife and I tend to go to our local Applebees since they offer a Weight Watchers menu and she can select from any number of delicious items without having to worry about her point intake, etc. Best of luck on this one!
I have been wishing for a restaurant like this since the 80's. Just a place where you can order food knowing what the nutritional value is. And when I was on a specific diet that wasn't easy to take on the road, it would be great to be able to go somewhere and get a good meal that conforms to the diet.
